Decadent Oat & Mill Turtle Crossing Ice Cream Pie

And what better way than to continue to honour our love for turtles than creating a one-of-a-kind homemade melt-in-your-mouth ice cream pie. Our creamy vanilla base with pockets of toasted pecan pralines and dark chocolate chunks will leave you drooling. And lastly, let's not forget, our dark chocolate is fairly traded. What more could you ask for in an ice cream flavour?
This recipe also includes a homemade flaky vegan pie crust, satisfying fudge ganache and homemade caramel candies that capitalize on that sweet and salty crunch factor that we can't get enough of. This pie has all the charm of a classic pecan pie and then some, we at Oat & Mill believe the future of pecan pie involves ice cream and we’re sure you’ll agree with us by the end of this recipe. 
Now lets get started!
You will need:
Vegan Pie Crust
Oat & Mill’s (Delightful) Turtle Crossing Ice Cream
Fudge Ganache
Homemade Caramel Candies
For the crust:
1 1/2 cups Unbleached All-Purpose Flour
1/4 teaspoon Salt 1/2 cup Vegan Butter
4 tablespoons Cold Water
For the crust you will begin by combining the flour and salt. Ensure your vegan butter is at room temperature and begin to mix in with fork. Then form the dough into 3 small balls. Out of these 3 balls roll one out on a floured surface. Freeze the remaining dough balls for later or make more mini pies! Bake crust in small pie dish at 450 degrees for 15 minutes, then remove from oven and let cool.
For the ganache:
1 cup Water
1/2 cup Sugar
1/2 cup Cocoa Powder
Pinch of Salt
1 cup Dark Chocolate
Now that we have our flaky delicious crust prepared our next step is the ganache! For this you will begin by whisking together water, sugar and cocoa in a medium saucepan. Bring all ingredients to a boil and lower heat to simmer for 10 minutes. Remove from heat, stir in chocolate chips and let cool.
For the homemade caramel candies:
1 cup of sugar
Pinch of Salt
To obtain these crisp caramel candies you will begin by placing sugar in a medium saucepan on medium heat, while stirring with a spatula for a few minutes until sugar melts. (Be careful it can burn extremely fast!) The caramel should be a light orange in colour (if its dark in colour you may have gone too far).
Then proceed to carefully remove from heat and pour onto parchment paper!
Lastly sprinkle some salt on top, let cool for 5 minutes then break into pieces. The finished product should look similar to the picture below.
Now let's put it all together in a memorable scrumptious ice cream pie.
Step 1: Begin by placing 1.5 scoops of Oat & Mill Turtle Crossing into the prepared baked pie shell. Use a spoon to ensure ice cream is packed into all corners of the pie.
Step 2: Proceed to spoon 1/4 cup of cooled fudge ganache on top of the creamy ice cream. Use a spoon to spread an even layer across the top of the pie.
Step 3: Sprinkle those crunchy delightful caramel candies on top of the fudge ganache.
Step 4: Set aside in freezer for at least 30 minutes, then slice and serve pieces of deliciousness in pie form! Store in a sealed container for up to 2 weeks.
