Chocolate Dreams. Mini Ice Cream Fudge Pie.

Ice cream fudge pie is a delicious dessert for any season or occasion. This made from scratch decadent pie is a combo of vegan pie crust, rich fudge ganache and our very own Oat & Mill creamy vanilla bean ice cream! Ice cream fudge pie can pair perfectly with holiday get togethers or even just a night in with your favourite movies. With a memorable combination of flavours and textures, finish it off by topping with a few chocolate chips, nuts or even sprinkles. The options are next to endless.
If you love fudge and you love ice cream, you’re bound to love this recipe. It is easy to make and super delicious, it is basically a creamy chocolate dream. The only thing you'll be disappointed about is waiting for it to be done in the freezer, and if you’re feeling adventurous you could even have an extra serving of our ice cream on the side.
All and all this is one for the recipe book! Now shall we get started?
For this recipe you will need:
Pie Crust:
1 cup Unbleached all-purpose flour
1/2 teaspoon Salt
1/2 cup Vegan Butter
2-3 tablespoon cold water
Fudge Ganache:
1 cup water
1/2 cup Sugar
1/2 cup Cocoa Powder
1/2 cup Dark Chocolate Chips
Extra Toppings (Nuts, Sprinkles) (Optional)
Now that we’ve got all the staple ingredients let’s move on to the vegan pie crust, for this you will begin by combining the flour and salt. Ensure your vegan butter is at room temperature and begin to mix in with fork. Add water. Then form the dough into 3 small balls. Out of these 3 balls roll one out on a floured surface.
Freeze the remaining dough balls for later or make more mini pies.
Bake crust in small pie dish at 450 degrees for 15 minutes, then remove from oven and let cool.
Now that we have our flaky delicious crust prepared let's move on to the ganache.
For this you will begin by whisking together water, sugar and cocoa in a medium saucepan. Bring all ingredients to a boil and lower heat to simmer for 10 minutes. Remove from heat, stir in chocolate chips and let cool!
Now what we’ve all been waiting for! On to the main event of putting it all together in a pie. This is done in 4 easy steps once the above steps are completed.
Step 1: Place 1 ½ scoops of Oat & Mill Vanilla Bean into our freshly baked pie shell.
Step 2: Spoon ¼ cup of cooled indulgent fudge ganache on top of the creamy ice cream. Use spoon to spread an even layer across the top of the pie.
Step 3: Sprinkle chocolate chips, nuts, sprinkles or whatever other fixin’s your heart desires on top of the fudge ganache.
Step 4: Set pie in the freezer for at least 30 minutes, then slice up the deliciousness and serve! Store in a sealed container for up to 2 weeks in the freezer.
And there you have it! A rich creamy decadent dessert that is bound to become a new favourite.
